HPP co-packers

High pressure processing presses sealed packages in water at about 400 to 600 MPa (58,000 to 87,000 psi) while the product stays chilled or mild, under 45°C. It keeps fresh flavor, but bacterial spores can be hard to inactivate with HPP, so the product stays refrigerated. The usual packages are high-barrier flexible pouches or plastic containers1.
Commercial HPP systems cost about $500,000 to $2.5 million, and HPP treatment costs have been quoted at 4 to 10 cents per pound1. Some plants send product to a separate HPP tolling facility instead of owning a vessel, and the list below marks those plants separately. USDA FSIS recognizes HPP as a food safety intervention1, and a validated HPP step can count toward the 5-log pathogen reduction that FDA's juice HACCP rule requires2.
