Hot fill co-packers
Fill hot so the heat sterilizes the jar and lid. Shelf-stable sauces, juices and teas. Every fact is checked against the manufacturer's own published information, with the date we checked it.
In a hot fill, the cooked product goes into the jar or bottle hot, and that heat sterilizes the container and its closure. Packaging makers list it for sauces, juices, sports drinks, teas and other noncarbonated drinks, and the container has to stand up to the heat and to the vacuum that forms as the product cools1.
For sauces, University of Minnesota Extension describes hot-fill-hold for smooth products at pH 4.1 or lower, such as barbecue sauce, with minimum holds that get shorter as the fill gets hotter: 12 minutes 42 seconds at 140°F, 1 minute 12 seconds at 160°F and 6 seconds at 180°F2. That guidance is written for cottage food. A product between pH 4.1 and 4.6 needs a different thermal process3, and a commercial plant runs the process a process authority sets for your exact product.
Most hot-filled sauces and salsas are acidified foods. The plant registers with FDA as an acidified food processor and files a scheduled process for each product in each container size before it packs that product4. On the first call, ask which jar and bottle sizes the line runs and who files the process for your product.
