Sauce, condiment and dressing co-packers

Sauces, condiments, dressings, dips, salsas and soups. Every fact is checked against the manufacturer's own published information, with the date we checked it.

Cornell's Food Venture Center notes that acidified and low-acid foods cannot be made in home kitchens, along with meat products and vacuum-packed foods1. Most shelf-stable sauces, salsas and soups fall in those groups, which is one reason founders in this category need a licensed kitchen or a co-packer early.

Before a plant can make an acidified sauce, the product needs a scheduled process from a process authority, and the plant files it with FDA for each product in each container size23. Cornell's published fee for a scheduled process is $95 per product for New York clients and $190 for others, with 4 to 6 weeks for regular service4.

Minimums in this category can be small. Published examples include a 40-gallon sauce run and one 10-hour production day for dressings5, and 25 cases or 100 to 150 gallons on Cornell's co-packer list1. Forty gallons is about 320 sixteen-ounce bottles.
